D\u2019une race au profil exceptionnel, elle attire toutes les affections, par son allure, sa robustesse, sa capacit\u00e9 de v\u00ealage et son instinct maternel.<\/p>\n\n\n\n<p>Introduite au XIXe si\u00e8cle par le maire de Saint Bonnet de Salers, Tyssandier d\u2019Escous, la vache Salers s\u2019est d\u2019abord d\u00e9velopp\u00e9e pour la viande et le lait et ensuite uniquement pour le lait gr\u00e2ce au fromage et aux appellations AOP initi\u00e9es par les professionnels locaux. Les fromages AOP Salers et AOP Cantal sont \u00e9troitement li\u00e9s \u00e0 la vache Salers car ils sont fabriqu\u00e9s avec le lait des troupeaux de Salers. Fabriqu\u00e9 traditionnellement par les paysans \u00ab vachers \u00bb \u00e0 l\u2019estive dans des burons, petites constructions de pierre aux toits de lauze, il l\u2019est aujourd\u2019hui \u00e0 la ferme pour l\u2019AOP Tradition Salers et en coop\u00e9rative pour l\u2019AOP Cantal au lait de Salers. Ces deux fromages se caract\u00e9risent par un go\u00fbt unique du aux propri\u00e9t\u00e9s particuli\u00e8res de ce site volcanique, riches en acide phosphorique, en potasse et en magn\u00e9sie d\u00e9veloppant une herbe grasse \u00e0 la flore diversifi\u00e9e.
