{"id":1210,"date":"2024-10-10T18:04:11","date_gmt":"2024-10-10T16:04:11","guid":{"rendered":"https:\/\/greenandcraft.com\/?p=1210"},"modified":"2026-03-22T13:47:39","modified_gmt":"2026-03-22T12:47:39","slug":"la-fabrication-de-la-fourme-de-montbrison","status":"publish","type":"post","link":"https:\/\/greenandcraft.com\/index.php\/2024\/10\/10\/la-fabrication-de-la-fourme-de-montbrison\/","title":{"rendered":"La fabrication de la fourme de Montbrison"},"content":{"rendered":"\n<p><\/p>\n\n\n\n<p>La fourme est n\u00e9e dans les \u00ab Jasseries \u00bb des Monts du Forez, confectionn\u00e9e selon le m\u00eame proc\u00e9d\u00e9 ancestral aux caract\u00e9ristiques constantes, au cro\u00fbtage orang\u00e9, au bleu doux, \u00e0 la p\u00e2te persill\u00e9e, \u00e9goutt\u00e9e en fin de fabrication dans des ch\u00e9neaux d\u2019\u00e9pic\u00e9a, retourn\u00e9e d\u2019un quart de tour matin et soir dans une temp\u00e9rature comprise entre 18 et 22 degr\u00e9s. 500 tonnes de fourme de Montbrison sont aujourd\u2019hui produites par an, n\u00e9cessitant une collecte de plus de 5 000 000 de litres de lait.\u00a0 Fabriqu\u00e9s \u00e0 l\u2019estive au-del\u00e0 de 1200 m\u00e8tres d\u2019altitude, dans des cabanes dites \u00ab loges \u00bb au XVIIe si\u00e8cle et \u00ab Jasseries \u00bb au XIXe si\u00e8cle, les fromages des Monts du Forez poss\u00e8dent les qualit\u00e9s exceptionnelles des p\u00e2tures des Hautes-Chaumes. L\u2019herbe y a une valeur nutritive bien sup\u00e9rieure \u00e0 celle du foin pour les vaches laiti\u00e8res qui produisent le lait destin\u00e9 \u00e0 la fabrication de la fourme.
