La valeur de son patrimoine architectural, urbain et paysager remarquable est attest\u00e9e de plus par le label Pays d\u2019Art et d\u2019Histoire du Pays de Billom Saint Dier. Les champs d\u2019ail qui ont remplac\u00e9 \u00e0 partir de 1860 le chanvre en d\u00e9clin pour accompagner la betterave sucri\u00e8re, ont entra\u00een\u00e9 un d\u00e9veloppement \u00e9conomique exceptionnel du territoire. Billom, cit\u00e9 m\u00e9di\u00e9vale, porte du Livradois marqu\u00e9e par un pass\u00e9 historique intense \u00e0 travers ses foires et march\u00e9s a permis la commercialisation de cet or blanc, atteignant son apog\u00e9e dans les ann\u00e9es 1950\/60. L\u2019inventivit\u00e9 des ing\u00e9nieurs de l\u2019INRA a amplement contribu\u00e9 \u00e0 cet essor, en cr\u00e9ant les vari\u00e9t\u00e9s adapt\u00e9es au territoire, celles de l\u2019ail rose d\u2019Auvergne. Avec une centaine d\u2019hectares de culture d\u2019ail, l\u2019Auvergne assure aujourd\u2019hui 5 % de la production nationale, devenue fragile face \u00e0 la production de masse et la concurrence internationale.
